Ingredients:

  • 1/2 small watermelon, hollowed out to yield 3 cups finely chopped watermelon (reserve rind to serve as a bowl)
  • 1/2 cup green peppers, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon green onions, chopped
  • 2-3 jalapeno peppers, seeded and chopped
  • 1/2 teaspoon garlic salt

Directions:

Combine all ingredients and mix well.

Pour ingredients into hollowed out watermelon rind. Cover and refrigerate at least one hour. Serve with tortilla chips.
