Salad Ingredients:
- 2-3 boneless chicken breasts, cooked and shredded
- 1 head lettuce, cut into small pieces
- 3 sections of Chinese rice sticks (they are sectioned off in the package) or cellophane noodles, fried
- 1/2 cup chopped green onions (both white and green parts)
- 1/2 cup chopped peanuts
Dressing Ingredients:
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup olive oil
- 1 tablespoon sesame oil
- 3 tablespoons vinegar
Directions:
Mix ingredients for salad dressing. (Double the recipe if you like more salad dressing.) Chill.
Sprinkle over salad and toss.
Note:
For rice sticks or cellophane noodles, follow deep-frying directions on package; use several bunches. Or, substitute chow mein noodles instead.
