Salad Ingredients:

  • 2-3 boneless chicken breasts, cooked and shredded
  • 1 head lettuce, cut into small pieces
  • 3 sections of Chinese rice sticks (they are sectioned off in the package) or cellophane noodles, fried
  • 1/2 cup chopped green onions (both white and green parts)
  • 1/2 cup chopped peanuts

Dressing Ingredients:

  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup olive oil
  • 1 tablespoon sesame oil
  • 3 tablespoons vinegar

Directions:

Mix ingredients for salad dressing. (Double the recipe if you like more salad dressing.) Chill.

Sprinkle over salad and toss.

Note:

For rice sticks or cellophane noodles, follow deep-frying directions on package; use several bunches. Or, substitute chow mein noodles instead.
